Why does tomato season have to end?! These beautiful heirloom tomatoes are the star of this dish. Unfortunately, it will not be as good with a plain ol' grocery store tomato—especially out of season. The cheddar mayo is a quick riff on pimiento cheese using fridge staples, and if you don't have everything bagel seasoning, salt and pepper will do just fine.
Sliced bread (any will do, but I used an Italian style loaf)
1/3 cup cheddar cheese (finely shredded)
2 tablespoons mayo
Everything Bagel seasoning
Salt & Pepper
Toast your bread. Meanwhile mix the cheddar with the mayo, and season with salt and pepper to taste. Assemble as desired and sprinkle with the everything bagel seasoning. Admire the flavor of a sweet juicy tomato, and call it a day.
